Elderberry Melomel - 7/10/92 5 Imp.
gallons
5 Kg honey (clover from Country Bulk)
7 Kg honey bucket full of elderberries
Racked: 2/11/92 - sorbate and pectaze added here WAY too strong so I didn't squeeze
the pulp. This will be allowed to settle then racked with a basic must. It was
also very acidic so base was added.
Tested: 12/12/92 - Not bad especially mulled. Still too strong for regular drinking
though
NOTES
20/09/93 still way too strong. I will mix it 1-1 with a basic mead
when the next one is done.
4/8/94 actually I cut this 50-50 with water and added two kilos of
honey to each 5 gallon carboy.
this then became a wedding mead for Eyrny and Hoskuld. Much better
this way although a little too watery.
Cherry Melomel - 28/6/92 10 IMP gallons
10 Kg clover honey (Country bulk)
1 full 5 US gallon bucket of cherries
Yeast: 1 batch made with wine art 1116 (white wine), the other with wine art 1118
(champagne)
Racked: 15/9/92 (Sorbate added) - The two types are very different colours and
flavours already.
Racked: 4/11/92 (Pectaze added) - attempted to cold clear it (carboys were placed
on the back porch in cold temperatures)
Racked: (WHITE) 14/11/92 - A very clear light pink colour. The cold clearing
is a big success.
Racked: (Champ) 17/11/92 - A much darker colour. Also very clear now.
Tasted: 12/12/92 - The champagne is showing a beautiful clarity and some very
subtle flavours. Unfortunately I am also getting a slightly bad taste which may
very well be the taste from the cherry pits. The white wine is a more "standard"
flavour and a little cloudier. It should be cleared again. My guess here is
the white wine will not change over the next long while. The champagne on the
other hand will change a lot over the next year or two.
NOTES
12/12/92 2L of each type was drawn off for the Strength project.
20/09/93 the "off" flavour mentioned turned out to be arsenic
from the pits. Probably a no-no in the future but still a nice taste overall.
Rhubarb Melomel - 15/9/92 2 US gallons
2 Kg clover honey (Country bulk)
3 L rhubarb juice
Method: The rhubarb was juiced (one full rhubarb patch full) and the juice left
for a while. I added sorbate to the juice so wild yeasts wouldn't start. However
far too much was added (due to clumping). I estimate that the 3L was hit with
0.4%. I decided to try the mead anyhow. Honey and water were added one week
later. As was the yeast. A very short (less than 24 hr) fermentation occurred.
Then the mead settled.
Racked: 2/11/92 - VERY sweet. Obviously an incomplete fermentation with a VERY
low alcohol content. Should make an interesting comparison. My bet at this point
is that it is very popular at WAR.
NOTES
21/9/93 This never did go to war and appears to have re-activated
over the summer in the basement.
FACE & MO's Wedding Meads
A total of 20 gallons of meads (apple - cinnamon, orange, blackcurrant, and basic)
were done specially for this wedding. All basic patterns were followed so no
special note has been made of them.
Butterscotch - 20/9/93 1 Gallon
1 KG Dandelion honey (country bulk)
1 bottle butterscotch extract (2oz)(country bulk)

Tested: 22/11/93 - Really quite nice (if a bit rough still). Try freezing some
of it.

Eyrny & Hoskuld's Wedding Meads
A total of 20 gallons of meads 10 Gallons of Ealderberry (see above) and 5 gallons
each of Apple-Cin and Apple-Blackcurrant. Both the "apple" meads were
done on a standard apple cider recipie (with Ribina for the blackcurrant) with
one change from my usual recipie - the cider was allowed to ferment first. This
produced a sweet mead with a very light carbination. Both apple meads were a
big hit and vanished fast.
